I am having a One Year Anniversary Open House at the end of the month and I have no idea what I should have for refreshments.  I thought about hot cocoa tea and water but I have no idea what I should have to snack on.  The open house is from 6-8pm. I am in a small town and do not want anything exquisite, but I don't want the plain ole veggie tray.  Any Ideas?

you could several little snack/h'ordurves.  I am all about the simple but here are some common party snacks.  You could do a meat cheese and cracker tray; meatballs or those little wieners in bbq sauce in a crock pot; spinach artichoke dip with bread and veggies to dip; most grocery stores have frozen pastries like eclairs and cream puffs; since it is fall you could cut apples into little slices and put a toothpick in them and dip them into caramel sauce; little cups with a popcorn and m&m mixture in them; you could do a chicken salad and use thick sliced cucumbers and the bowl; everyone loves a chip and dip of some sort. For a punch, any flavor sherbert and sprite is good; also a hot apple cider is starting to be in season now.  If you have a pintrest account there are all sorts of creative ideas for parties.  I realize that these are not the most healthy snacks but keep in mind who your guests will be and cater to that. 

Thank you Janae.  These are all good ideas.  I think I will definitely have the apples and caramel and apple cider.  Also the Spinach artichoke dip.

How exciting! It seems like you already have some great advice, but here are some of my thoughts to add to above:

fruit infused water. you can add cucumber and mint to the pitcher of water and ice or oranges to make the water more refreshing.

You can make little mini meatballs/turkey meatballs and serve them on a platter with a toothpick in each and a few dipping sauces maybe a BBQ sauce, marinara sauce, and a spicy sauce.

I'm sure if you did want to have a veggie tray, you could find or make a really cool dip to accompany the veggies. I think keeping it simple is best, especially if you might not have a way to keep food warm for 2 hours and want to make sure you have enough to serve your crowd!

You can fancy up a very simple thing like cheese cubes by using some more exotic cheeses that people might not have tried - it depends what is available, but if you have a supermarket with a deli section, there can often be some nice artisan cheeses there compared to the standard packaged ones in the dairy section.
